Creamy dressings won’t do your midsection any good, but you certainly can’t eat those buffalo wings dry. Tricia Williams of Food Matters provides her take on the traditional dipping sauce, but doesn’t add any cheese. In fact, there’s no dairy at all in this sauce. Instead, the recipe gets it’s thickness and tangy taste from pureed cashews. Just try it.
Recipe: “Blue Cheese” Dipping Sauce
Yield: 2 cups
Ingredients
1 cup raw cashews (about 5 oz.)
1 Tbsp. chopped flat-leaf parsley
5 tsp. nutritional yeast flakes
4 tsp. apple cider vinegar
2 tsp. fresh lemon juice
2 tsp. sea salt
1/4 tsp. freshly ground black pepper

Place cashews and 1 1/4 cups water in a medium bowl; let soak for 30 minutes. Transfer to a blender and puree on high speed until smooth and creamy. Add remaining ingredients and blend well. Chill for 30 minutes.
