Hummus without chickpeas might seem like the Super Bowl without a halftime show, but clinical nutritionist Kimberly Snyder, who counts Drew Barrymore and Fergie as clients, says using her zucchini-based version helps digestion and cuts down on bloated feelings triggered by the starch in chickpeas. The dip lasts for several days, too, and it’s light enough to be used as dressing in a post-touchdown celebration salad.
Recipe: Raw Chickpea-Less Hummus
Ingredients
2 organic zucchinis, chopped
3/4 cup tahini (raw if you can find it)
2 Tbs. nutritional yeast
1/2 cup fresh lemon juice
2 medium or 3 small garlic cloves, minced
High quality sea salt, to taste
Blend all ingredients in the blender together until smooth.
